Green Bean Casserbowl

Just like turkey, casseroles have a place on the Thanksgiving menu, whether it’s vegetable or meat based. Orange County Public Schools (OCPS) shakes it up by combining both into a Thanksgiving casserbowl. While this recipe uses chicken as the main protein, turkey can easily take its place and provide the same great flavors. To make this dish at home, adjust the amount of each ingredient to align with the number of people on your guest list. Keep the dish healthy just like OCPS by opting for low-sodium gravy, fresh vegetables, and choose brown rice instead of white rice. This dish is the perfect combination of all of the elements represented on a traditional Thanksgiving spread, all wrapped up into one flavorful dish.

1. Rice
– Prepare rice according to manufacturer’s directions.
– Hold in warmer until ready to assemble bowl.

2. Chicken Nuggets
– Cook nuggets from frozen.
– Place nuggets in a single layer on lined sheet pan.
– Cook in a convection oven for or until temperature reaches 165F.
– Keep chicken nuggets in warmer until ready to assemble bowl.

3. Quick Cuisine Poultry Gravy
A) Machine:
– Use 4″ x 1/2 size steam table pan.
– Attach bag of gravy mix to dispenser
– Allow water to reach temperature and dispense.

B) By Hand:
– Use 4″ x 1/2 size steam table pan.
– Add 160F-190F hot water (do not use boiling water).
– Gradually add mix to water while stirring briskly with a whisk.
– Stir until gravy is completely smooth.
– Hold in warmer until ready to assemble bowl.

4. Green Beans
– Green beans should be broken apart and spread out over the pans.
– RECOMMENDED METHOD – Cook in 2″ perforated pan over a 4″ solid pan for 7-10 minutes in steamer or until temperature reaches 140F.
– DO NOT ADD MARGARINE AND VEGETABLE SEASONING TO PAN, VEGETABLES SHOULD ONLY BE SEASONED AFTER THEY ARE COOKED AND DRAINED.
– Drain water and transfer to a solid pan.
– Season with margarine and vegetable seasoning.
– Hold green beans in warmer until ready to assemble bowl.

5. Assemble bowls as follows:
– Portion 1 cup rice in an 8oz casserole bowl
– Portion 1/2 cup green beans on top of rice
– Portion 5 pcs of chicken over green beans
– Portion 2 Tbsp gravy over chicken
