“I feel really excited to be opening up a food truck in Orlando, where the food scene is quickly growing into a global phenomenon,” Pacchioni said. “There are incredible chefs, restaurants and pop-ups that rival any city, and I’m grateful to be a part of it. Working with Chef Mike Collantes is a dream come true. I’ve been a fan of Soseki for years, by far one of my favorite restaurants in Orlando, and this is what gave me the confidence to open up this elevated cheesesteak concept. I wouldn’t be here if it wasn’t for him.”

Sunday dinners with his fiancé Katelyn’s Philly-based family, combined with the flavors he encountered exploring the globe with his mother, have shaped his vision for Pacchioni’s World-Inspired Cheesesteaks.
